I post here the contribution of Screpanti to the May 21, 2002 conference. I have posted both the Italian and the English version. Unfortunately, I do not know who translated which into what. Only I remember the two most memorable polentas I have ever enjoyed, the first being inthe Tuscan home of Ernesto Screpanti, the second being that served by the family of Riccardo Bellofiore in Bergamo.

As a result of these encounters I was toured through, and historically introduced to, the mediaeval history of central Italy as revealed in the architecture of its towns.

I’m still digesting it. What else can I say?
